Method
- Slice the tomatoes and place them in a large bowl.
- Add the cucumber and red onion.
- Sprinkle with the salt and let everything sit for 10–15 minutes. This draws out a little juice and creates an incredibly flavorful dressing.
- Add the olive oil, vinegar, pepper, basil, and parsley.
- Toss gently.
- Taste and adjust with more salt or vinegar if needed.
- If using feta or mozzarella, fold it in just before serving.
Notes
A few tips that make a big difference
- Don't refrigerate your tomatoes before making the salad. Room-temperature tomatoes have much better flavor.
- If your cucumbers have large seeds, scoop them out first.
- Use a good-quality extra-virgin olive oil—the dressing is simple, so every ingredient matters.
- Let the finished salad rest for 10 minutes before serving so the flavors meld.
