Cover almonds with hot water. Soak 15–20 minutes, then drain. Because they’re sliced, this is all you need. Long soaks will dull flavor.
Add soaked almonds + 1½ cups fresh water to your Vitamix. Start low, then increase to medium (5–6 max). Blend 30–45 seconds total.Stop when liquid looks creamy and opaque and almonds are broken down. Do NOT push to high speed or long blend times. Let the mixture sit 10–15 minutes. This boosts oil extraction and improves flavor.
Strain thoroughly through a nut milk bag (ideal), or clean kitchen towel, or 3–4 layers of cheesecloth. Squeeze aggressively. Then strain a second time for smoothness.
Pour almond milk into a saucepan. Add sugar and pinch of salt. Add lemon zest (if using). Heat gently (do NOT boil), stirring until sugar dissolves. Remove from heat and let cool slightly and strain out zest if used.
Add aromatics: Stir in ½ tsp rose water, almond extract (if using), and vodka (if using).
Transfer to a sealed bottle and refrigerate. The shelf life is ~2 weeks (no alcohol) and ~1 month (with alcohol).
