Homemade Orgeat

Orgeat is one of those classic cocktail ingredients that many people have tasted without ever quite knowing what it is, yet it plays a surprisingly important role in shaping the flavor and texture of a drink.

Traditionally made from almonds, sugar, and a touch of floral water such as orange blossom or rose, orgeat is a rich, nutty syrup with a subtle aromatic lift that adds both sweetness and depth. It is most commonly associated with tropical and tiki-style cocktails like the Mai Tai, but its versatility extends far beyond that, pairing just as well with citrus-forward gin drinks, whiskey-based cocktails, or even non-alcoholic beverages.

At its best, orgeat doesn’t simply sweeten a drink; it rounds out sharp edges, enhances mouthfeel, and introduces a delicate complexity that’s difficult to replicate with any other ingredient.

Homemade Orgeat

Ingredients
  

  • 1 cup raw sliced almonds
  • cups water for blending
  • 1 to 1¼ cups sugar start with 1 cup
  • ½ tsp Cortas rose water adjust to taste
  • Pinch of salt
  • Optional: ¼ tsp almond extract
  • Optional: 1 oz vodka for preservation
  • Optional recommended: zest of ½ lemon

Method
 

  1. Cover almonds with hot water. Soak 15–20 minutes, then drain. Because they’re sliced, this is all you need. Long soaks will dull flavor.
  2. Add soaked almonds + 1½ cups fresh water to your Vitamix. Start low, then increase to medium (5–6 max). Blend 30–45 seconds total.
    Stop when liquid looks creamy and opaque and almonds are broken down. Do NOT push to high speed or long blend times.
  3. Let the mixture sit 10–15 minutes. This boosts oil extraction and improves flavor.
  4. Strain thoroughly through a nut milk bag (ideal), or clean kitchen towel, or 3–4 layers of cheesecloth. Squeeze aggressively. Then strain a second time for smoothness.
  5. Pour almond milk into a saucepan. Add sugar and pinch of salt. Add lemon zest (if using). Heat gently (do NOT boil), stirring until sugar dissolves. Remove from heat and let cool slightly and strain out zest if used.
  6. Add aromatics: Stir in ½ tsp rose water, almond extract (if using), and vodka (if using).
  7. Transfer to a sealed bottle and refrigerate. The shelf life is ~2 weeks (no alcohol) and ~1 month (with alcohol).
